Chicken, Corn & Black Bean Quesadillas

  1. Mix first 5 ingredients in a bowl.
  2. Scoop and spread 2 spoons of mix onto half of tortilla.
  3. Sprinkle with cheese and fold other half over.
  4. Spray large skillet with cooking spray.
  5. (I fit 3 in skillet).
  6. Cook on medium heat for 3 to 4 minutes.
  7. With a wide spatula (put open side of quesadilla to the inside of spatula) flip and cook for 3 to 4 more minutes.
  8. Gently transfer to serving platter.
  9. This made 10 quesadillas.
  10. Serve with salsa and sour cream.
