Strufuli
- 300 grams flour
- 3 each eggs
- 100 grams butter
- 15 ml extra virgin olive oil
- 1 pinch salt
- 20 grams yeast (plus warm water to activate)
- 40 grams liqour (Strega, cognac- optional)
- 1 each zest of one lemon
- 200 grams sugar
- 200 grams honey
- 100 grams candied sprinkles, balls etc.
- Pour flour onto work surface with a small well on top to hold egg and butter.
- Combine with fork, eggs, butter sugar liquor (optional) and the grated lemon peel (orange peal optional) and a pinch of salt.
- Add yeast activated in warm water and doubled in size.
- (Can also be made without yeast.)
- Combine and knead until the pasta is solid and slightly shiny.
- Allow to rest approximately 30 minutes.
- Pull off sections and roll into long strips.
- Cut small squares and toss onto lightly floured cloth until ready to fry.
- Fry until golden and use slotted spoon to remove.
- Allow to dry on paper towels until cooled and ready to combine with honey.
- Heat honey with a tbs of water until bubbling.
- Remove from heat and add fried pasta.
- Mix well.
- Top with candied sprinkles/ confettini.
