Slow- Cooked Spiced Lamb
- 1 tablespoon oil
- 2 small red onions, sliced
- 1/4 cup seasoned flour
- 1 teaspoon cumin
- 8 lamb chump chops, trimmed Safeway 1 lb For $5.99 thru 02/09
- 800g can diced tomatoes
- 1 tablespoon VEGEMITE
- 600g baby chat potatoes
- 1/2 cup chopped flat- leaf parsley
- cooked zucchini and button squash, to serve
- Heat half the oil in a large frying pan over medium heat and saute onions until tender, then transfer to slow cooker.
- Combine flour and cumin and coat lamb chops.
- Heat remaining oil in the frying pan and cook over high heat for 2 minutes each side, until browned, then transfer to slow cooker
- Add the tomatoes, Vegemite and potatoes to the slow cooker, cover and cook on HIGH for 3-4 hours or on LOW for 6-8 hours.
- Skim fat from sauce then serve alongside zucchini and squash, sprinkled with parsley.
