Slow- Cooked Spiced Lamb

  1. Heat half the oil in a large frying pan over medium heat and saute onions until tender, then transfer to slow cooker.
  2. Combine flour and cumin and coat lamb chops.
  3. Heat remaining oil in the frying pan and cook over high heat for 2 minutes each side, until browned, then transfer to slow cooker
  4. Add the tomatoes, Vegemite and potatoes to the slow cooker, cover and cook on HIGH for 3-4 hours or on LOW for 6-8 hours.
  5. Skim fat from sauce then serve alongside zucchini and squash, sprinkled with parsley.
