Healthy Gluten and Dairy Free Chocolate Chip Cookies/Bars

  1. Mix all ingredients well.
  2. If mixture is too dry/clumpy add a little extra almond milk.
  3. Form into 1 inch balls, and press surface lightly with fork to flatten a little.
  4. Cook at 350 for 14 to 16 minutes.
  5. Cookies will not rise or enlarge much in size, and they will be dense - more like an energy bar consistency.
  6. I've also made this as true bars - just press into a pan, bake about 20 min and cut into rectangles.
  7. The recipe works fine with regular flour, and you may substitute any type of nut butter.
  8. We just happen to be a gluten-free household, and I like the flavor of the coconut flour in the cookies.
