Whole Grilled Ohio Spring Peas

  1. Bring large pot of salted water to a boil.
  2. Add pea pods, and blanch 2 minutes, or until bright green.
  3. Drain, and transfer to large bowl of ice water to cool.
  4. Drain, and pat dry.
  5. Preheat grill to medium.
  6. Toss together pea pods, olive oil, and lemon juice in large bowl.
  7. Grill peas 3 to 4 minutes, or until outsides are browned.
  8. Transfer to bowl, and toss with salt.
  9. Place on serving platter; garnish with radishes, horseradish, and lemon zest, and drizzle with more olive oil, if desired.
