Ginger Nectarine Buckle
- 34 cup unsalted butter
- 34 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon ground ginger
- 14 teaspoon salt
- 2 large eggs
- 2 teaspoons vanilla
- 1 12 cups all-purpose flour
- 13 cup milk
- 3 nectarines, pitted and sliced
- 2 tablespoons flour
- 2 tablespoons light brown sugar
- 2 tablespoons chopped crystallized ginger
- 1 tablespoon butter
- Preheat oven to 350 degrees.
- Streusel for topping:.
- Mix 2 tbsp four and 2 light brown sugar, 2 tbsp crystallized sugar and 1 tbsp butter in a small bowl.
- Sprinkle on top.
- Evenly coat a 10 inch springform pan with nonstick cooking spray.
- Beat butter, sugar, baking powder, ginger and salt in large bowl with mixer on medium high speed until smooth.
- Beat in eggs and vanilla until blended.
- Reduce mixer speed to low, beat in flour and milk just until combined.
- Spread batter evenly into prepared pan.
- Place nectarine slices on top.
- Sprinkle Streusel topping on top.
- Bake 45 to 50 minutes until wooden pick inserted in center comes out clean.
- Cool 15 minutes in pan.
