Baked Peaches with Marzipan and Almonds
- 4 ripe peaches, halved lengthwise and pitted
- 2 oz (60g) marzipan
- 1 1/2 tbsp heavy cream
- 1/4 cup slivered almonds
- 1 tbsp honey
- 2 tbsp light brown sugar
- 1/2 cup sweet wine or Marsala
- Shallow ovenproof dish
- Preheat the oven to 400F (200C).
- Place the peaches in a baking dish, cut sides up.
- Mash the marzipan with the cream.
- Spoon into the peaches.
- Sprinkle with the almonds and drizzle with the honey.
- Sprinkle with the sugar, then with the wine.
- Bake for about 20 minutes, or until just tender.
- Cover and let stand 5 minutes.
