Sparkling Pineapple Ring
- 1 (20 ounce) can chunk pineapple
- 1 (6 ounce) package lemon Jell-O gelatin
- 1 cup boiling water
- 2 tablespoons lemon juice
- 13 cup pineapple syrup
- 1 12 cups chilled ginger ale or 1 12 cups champagne
- 1 small banana, sliced
- 12 cup sliced strawberry
- 34 cup mayonnaise
- 1 tablespoon honey
- 14 cup flaked coconut (rinsed with cold water and drained)
- 1 tablespoon lemon juice
- 34 teaspoon lemon zest
- TIP: Use a ring mold or a pretty glass bowl.
- Dissolve Jell-O in water; add lemon juice and pineapple syrup.
- Cool to room temperature.
- Stir in gingerale or champagne.
- Chill until thick.
- Fold in fruit.
- Chill until serving time.
- Mix the ingredients together for the Coconut Dressing and chill until serving time.
