Buffalo Chicken on a Stick
- 1 pound Boneless, Skinless Chicken Breast, Cut Into 20 Strips
- 3/4 cups Buffalo Sauce
- 20 whole Wooden Skewers
- 1 cup Light Sour Cream
- 1/2 cups Blue Cheese Crumbles
- 1/4 cups Chopped Fresh Mint, Plus More For Garnish
- 2 cloves Garlic, Minced
- 1 pinch Sea Salt (or More To Taste)
- 1 pinch Freshly Ground Black Pepper, Or More To Taste
- Preheat the broiler to high and place oven rack about 4 inches below the coils.
- Soak the wooden skewers in warm water for at least 10 minutes (do not skip this step or the skewers will char).
- Line a large, rimmed baking sheet with tin foil and spray with cooking spray.
- Marinate the chicken strips in 1/2 cup of the Buffalo sauce for at least 10 minutes.
- Meanwhile, in a medium bowl, combine sour cream, blue cheese, chopped mint and garlic to make the sauce.
- Season with salt and black pepper to taste.
- Thread the chicken strips onto skewers and arrange on baking sheet.
- Broil until the chicken is cooked through, about 8 minutes, flipping once halfway through.
- Transfer chicken to a serving dish and drizzle with remaining 1/4 cup Buffalo sauce.
- Sprinkle with chopped mint leaves to garnish.
- Serve with blue cheese dip.
