Greek Tomatillo Guacamole
- 3 Avocados, Peeled, Cored, And Cubed
- 4 Tomatillos, De-husked And Roughly Chopped
- 1/2 Green Bell Pepper, Cored, Seeds Removed And Roughly Chopped
- 1/2 Red Onion, Roughly Chopped
- 1 clove Garlic
- 1 Jalapeno, Roughly Chopped
- 1/4 cups Pitted Kalamata Olives
- 1/2 cups Fresh Cilantro
- 13 cups Fat Free Greek Yogurt
- 2 teaspoons Salt
- 1 teaspoon Pepper
- 1 teaspoon Cumin
- 1/2 teaspoons Cayenne
- 1/2 teaspoons Red Pepper Flakes (optional)
- In a large bowl, mash avocados.
- In a food processor, pulse tomatillos until almost pureed.
- Add puree to the avocados.
- Add bell pepper, onion, garlic, cilantro, jalapeno, olives, and Greek yogurt to the processor.
- Pulse until combined and nearly smooth.
- Add this mixture to the avocado bowl.
- Stir to combine.
- Add seasonings and adjust to taste.
