Somen Noodle, Prawn and Cucumber Salad
- 2 short cucumbers
- 100 g dried somen noodles
- 12 cooked king prawns, peeled deveined and cut halfway
- 3 spring onions, thinly sliced
- 12 teaspoon dashi, granules
- 12 cup rice vinegar
- 14 cup mirin
- 1 teaspoon shoyu
- 2 teaspoons fresh ginger
- cut cucumbers in half length wise, scoping out seeds and slice very thin.
- put in a colander sprinkle with salt and set aside 10 minutes.
- mix dashi granules with 1 tsp hot water till dissolved.
- add rice vinegar, mirin, shoyu, ginger and sugar and stir.
- chill.
- cook noodles until tender and drain.
- rinse under cold water until cool.
- combine noodles, prawns, and onion.
- pour dressing over and serve.
