Turkish Patlican (Poplajon, Eggplant) Recipe
- potatoes
- onions
- garlic
- parsley
- eggplant peeled or not
- carrots
- olive oil
- tomato, if want
- tomato paste
- Fetta Cheese or the like
- oregano
- Zucinni (If desired)
- Yogurt (If desired)
- Olive Oil
- Cut up vegetables, add tomato paste and olive oil in a pot, they use a clay pot here.
- Stir until hot add vegatables and let cook until tender.
- Can add meat if desire.
- Add cheese and yogurt to top.
