Mama's Fried Rice
- 3 to 4 cups steamed white long grain rice
- 1 lg. onion, finely chopped
- 6 slices bacon, chopped
- 1 green pepper, finely chopped
- 1 carrot, grated
- 1/2 cup cooked peeled shrimp (optional)
- 2 eggs, made into omelette and chopped
- Kikoman soya sauce (brand important!)
- 1 tsp. chicken flavoured stock powder
- Fry onion over medium heat until transparent.
- Add bacon and fry until cooked.
- Add green pepper, carrot and shrimp.
- Stir fry for approximately 5 minutes.
- Add cooked rice and mix thoroughly to distribute the vegetables into rice.
- Add chicken stock powder and soya sauce (maximum 50 ml.)
- until desired flavour achieved.
- Make omelette with eggs, chop roughly and place on top of rice to serve.
