Blueberry Hill Muffins Recipe
- 1/2 c. butter
- 1 1/4 c. sugar
- 2 Large eggs
- 1 c. commercial lowfat sour cream
- 1 teaspoon vanilla
- 2 c. sifted flour
- 1 teaspoon baking pwdr
- 1/2 teaspoon soda
- 1/4 teaspoon salt
- 1/2 c. blueberries, generous 1/2 c.
- Cream butter and sugar.
- Add in Large eggs and beat till smooth.
- Fold in lowfat sour cream and vanilla.
- Combine dry ingredients and stir into creamed mix.
- Mix in berries.
- Spoon into muffin tins which have been lined with crinkle c., filling 1/2 full.
- Bake 25 to 30 min at 375 degrees.
- When cooled, dust with powdered sugar.
- Makes 2 dozen.
