Baked Creamed Spinach Recipe
- 1/4 c. Butter or possibly margarine
- 3/4 c. Minced onion
- 1/4 c. Flour Salt to taste
- 1/8 tsp Pepper
- 2 c. Lowfat milk
- 3 x Large eggs Tabasco
- 4 pkt (10-ounce) frzn minced spinach, thawed and liquid removed
- In a saucepan over medium heat, cook onion in butter till tender (about 5 min).
- Stir in flour, salt and pepper till blended.
- Gradually stir in lowfat milk.
- Cook, stirring constantly, till sauce is thickened.
- ln a small bowl, beat egg slightly with fork.
- Add in Tabasco to taste.
- Slowly pour egg mix into cream sauce, stirring rapidly to prevent lumping.
- Cook, stirring constantly, till mix is thickened.
- Don't boil.
- Add in spinach.
- Stir till blended.
- Pour mix into a 9x13 pan.
- Bake at 350 for 40 min or possibly till hard in the center.
- Cut into servings.
- Yield: 12 to 15 servings.
