Old-Fashioned Spice Cake
- 1 can evaporated milk
- 2 1/2 cups flour, all-purpose
- 1 cup sugar granulated
- 1 cup raisins, seedless if desired
- 3/4 cup brown sugar
- 23 cup vegetable shortening
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 3/4 teaspoon cinnamon ground
- 3/4 teaspoon allspice ground
- 1/2 teaspoon cloves ground
- 1/2 teaspoon nutmeg ground
- 3 large eggs
- Frost Old-Fashioned Spice Cake with Caramel Frosting.
- Mix 113 cups of the evaporated milk and the vinegar; reserve.
- Heat oven to 350F (180C).
- Beat vinegar mixture and remaining ingredients except Caramel Frosting on low speed 30 seconds, scraping bowl constantly.
- Beat on high speed 3 minutes, scraping bowl occasionally.
- Pour into pan(s).
- Bake rectangle about 45 minutes.
- Cool rectangle on wire rack.
- Cool layers 10 minutes; remove from pans and cool completely on wire rack.
