Festivals
- 125 grams plain / all purpose flour
- 175 grams cornmeal/polenta (yellow)
- 2 tsp baking powder
- 1 tbsp granulated sugar
- 1/2 tsp salt
- 1/4 tsp vanilla extract
- 1 oil to deep fry
- Mix all dry ingredients together
- Add vanilla and sufficient cold water to make firm dough
- Knead and divide into 8 pieces
- Form each piece into an elongated barrel/ sausage shape using your hands
- Heat oil in deep pan / wok to approximately 190c
- Fry festivals 4 at a time until golden brown (about 5-6 minutes)
- Drain and place on kitchen paper to soak up oil
- Serve.
- Goes well with jerk chicken or any Carribean dish
- You can use demerara sugar instead of white.
- Cornmeal can be fine,medium or coarse, just alters the "mouthfeel"
