  1. Mix all dry ingredients together
  2. Add vanilla and sufficient cold water to make firm dough
  3. Knead and divide into 8 pieces
  4. Form each piece into an elongated barrel/ sausage shape using your hands
  5. Heat oil in deep pan / wok to approximately 190c
  6. Fry festivals 4 at a time until golden brown (about 5-6 minutes)
  7. Drain and place on kitchen paper to soak up oil
  8. Serve.
  9. Goes well with jerk chicken or any Carribean dish
  10. You can use demerara sugar instead of white.
  11. Cornmeal can be fine,medium or coarse, just alters the "mouthfeel"
