Sweet Italian Pasta
- 1 pound Sweet Italian Sausage
- 1/2 Yellow Onion, Diced
- 2 cloves Garlic, Minced
- 2 Tablespoons Extra Virgin Olive Oil
- 3 cups Chicken Broth
- 1/4 teaspoons Pepper
- 10 ounces, weight Spinach
- 1/2 cups Half-and-half
- 3/4 pounds Penne Pasta, Cooked According To Package Instructions Then Drained
- 1 Tablespoon Cornstarch, For Thickening (optional)
- 2 Tablespoons Shredded Parmesan (Optional)
- Put the olive oil into a saute pan over medium heat.
- Add the sausage, onion and garlic into the olive oil and cook until sausage is browned cooked and onions are opaque.
- Drain off the grease and set aside.
- In a pot over medium heat, combine chicken broth, pepper and spinach.
- Cook for 10 minutes until spinach is wilted.
- Add sausage mixture and cook for another 10 minutes to let flavors mingle.
- Then add the half-and-half and let the mixture simmer while you make your pasta.
- If you want to thicken this from a broth into a sauce, scoop out about 1/2 cup of the warm broth.
- Add about a tablespoon of cornstarch, stir well and add the mixture back into the pot.
- Serve this over the pasta and top with the shredded Parmesan if desired.
- This pasta is fantastic with a nice crusty bread to soak up the broth with.
