Mild Curried Vegetable

  1. Heat a frying pan or wok, add a little oil and stirfry onion, garlic, ginger and spices for 8-10 minutes until onion is soft.
  2. Add vegetables and stir fry 6 minutes or until tender.
  3. Add combined coconut milk, Vegemite* and fruit chutney and cook a further 2-3 minutes.
  4. Serve immediately as main meal accompaniment or with steamed rice.
