Mild Curried Vegetable
- 1 large onion, cut into thin wedges King Sooper's 1 lb For $0.99 thru 02/09
- 1 clove garlic, crushed
- 1 teaspoon fresh grated ginger
- 1 tablespoon curry powder
- 1/2 teaspoon chilli powder
- 1 carrot, thinly sliced Target 2 lb For $3.00 thru 02/06
- 1 stalk celery, sliced
- 1 red capsicum, finely sliced
- 2 cups broccoli florets
- 1/2 cup coconut milk
- 2 teaspoons VEGEMITE
- 2 tablespoons fruit chutney
- Heat a frying pan or wok, add a little oil and stirfry onion, garlic, ginger and spices for 8-10 minutes until onion is soft.
- Add vegetables and stir fry 6 minutes or until tender.
- Add combined coconut milk, Vegemite* and fruit chutney and cook a further 2-3 minutes.
- Serve immediately as main meal accompaniment or with steamed rice.
