Avocado Shrimp Wrap
- 6 whole Shrimp, Cleaned And Deveined
- 1 teaspoon Olive Oil
- 1/2 cups Avocado, Cubed
- 1 teaspoon Lemon Zest
- 2 teaspoons Light Ranch Dressing
- 1/4 cups Cilantro, Chopped
- 2 whole Reduced Carb Wraps, Trader Joe's
- 1 cup Baby Spinach
- Rinse shrimp under cool water clean and devein.
- Boil in water over medium heat until pinkish in color.
- When cooked, place in a bowl with ice water to cool.
- Set aside.
- In another small mixing bowl, add olive oil, avocado, lemon zest, ranch dressing, and cilantro.
- Add cooled shrimp and toss to coat.
- Place wraps on a plate and add baby spinach.
- Top with shrimp and avocado mixture.
- Serve with a side salad or chips!
