Rise & Shine Muffins
- 1 egg
- 1 cup skim milk
- 1/3 cup non-hydrogenated margarine, melted
- 3 cups honeycomb-shaped sweetened corn and oat cereal
- 1/4 cup dried cranberries
- 1 cup flour
- 2 Tbsp. sugar
- 1 Tbsp. Magic Baking Powder
- Preheat oven to 400F.
- Beat egg, milk and margarine in medium bowl with wire whisk until well blended.
- Stir in cereal; let stand 3 min or until cereal is softened.
- Meanwhile, toss cranberries with flour, sugar and baking powder.
- Add cereal mixture; stir just until moistened.
- (Batter will be lumpy.)
- Spoon evenly into 12 greased muffin cups, filling each cup two-thirds full.
- Bake 20 min.
- or until wooden toothpick inserted in centres comes out clean.
- Cool in pan 5 min.
- Remove to wire rack; cool completely.
