Liang Ban (Mushroom Salad With Chiles)

  1. Working in batches, place chiles in a spice grinder and process until finely ground.
  2. Transfer to a medium bowl and stir in scallions, oil, vinegar, and soy sauce to form a thick sauce.
  3. Set sauce aside.
  4. Bring a 4 qt saucepan of salted water to a boil over high heat.
  5. Add mushrooms and cook until lightly chewy (5 minutes).
  6. Drain mushrooms and transfer to a kitchen towel.
  7. Squeeze out as much liquid as possible.
  8. Transfer mushrooms to bowl with sauce and toss until evenly coated.
  9. Let sit 10 minutes before serving.
