Nearly Scratch Chicken Pot Pie
- 1 (32 ounce) container chicken stock (low sodium)
- 3 chicken breasts, quartered
- 1 large onion
- 1 cup flour
- 1 teaspoon salt
- 1 tablespoon pepper
- 2 (8 ounce) bags mixed vegetables
- 1 (8 ounce) bag pearl onions
- 1 cup butter (shame shame)
- 2 pie crusts
- melt 2 sticks of butter in a deep pan.
- add onion and chicken.
- saute until chicken and onion are cooked.
- add enough flour to thoroughly coat everything and soak up butter.
- add chicken broth.
- salt and pepper to taste.
- allow to cook occasionally stirring until it reaches desired consistency.
- in a large mixing bowl, add chicken mixture, veggies & onions and stir.
- prepare pie crusts, evenly distribute mixture into crusts.
- add top to pies, cut a couple of holes.
- cook at 375 for 1 hour.
- allow to sit for at least 30 minutes before serving---can sit in oven up to 2-3 hours and remain warm.
