Orange Orange Roughy

  1. Rinse fillets nd pat dry.
  2. In a shallow bowl, combine the juice, waster, wine, coriander, and rind.
  3. Add the fish, let marinate 20-30 minutes in the fridge.
  4. Heat the oil and butter in a large nonstick skillet.
  5. Add the fish and cook 2 minutes per side or until fish flakes when tested with a fork.
  6. Remove fish, place on serving platter, and season with salt.
  7. Deglaze the skillet with the marinade.
  8. Pour over fish and sprinkle with cilantro.
