Strawberry Vinaigrette
- 1 quart fresh strawberries
- 3 tbsp lemon juice
- 1/4 cup sugar
- 2 tbsp cider vinegar
- 2 tbsp olive oil
- 1 pinch poppyseed
- Wash, hull and cut in half strawberries.
- Place strawberries in a blender, cover and process until blended.
- While processing, gradually add vinegar and oil in a steady stream; process until thickened
- Add sugar and process until blended
- Stir in poppyseed
- Transfer to a large bowl or jar
- Cover and store in the refrigerator.
- Will last approximately 1 week in the refrigerator
