Truffle Cheesecake

  1. Mix together cookie crumbs and butter.
  2. Press firmly onto bottom of 9-inch spingform pan.
  3. In large mixer bowl, beat cream cheese until fluffy.
  4. Gradually beat in Eagle Brand until smooth.
  5. Add remaining ingredients; mix well.
  6. Pour into pan.
  7. Bake 1 hour in preheated 325F oven, or until center slightly jiggles when is lightly shaken.
  8. Cool.
  9. Chill.
  10. just before serving, remove side of springform pan.
  11. Garnish as desired.
