Classic (and Easy) Tomato Bruschetta
- 1 loaf French Baquette
- 20 whole Cherry Tomatoes (Different Varieties Look Best)
- 1 clove Garlic
- 15 leaves Fresh Basil
- 2 Tablespoons Olive Oil, Divided
- Salt And Pepper, to taste
- Parmesan Cheese For Garnish
- Slice bread at an angle about 1/2 inch thick.
- Arrange on serving platter or cutting board in single layer.
- Quarter cherry tomatoes and add to a small mixing bowl.
- Finely chop garlic and add to tomatoes.
- Stack basil leaves and roll to form a green bean-looking log.
- Slice into thin strips.
- Drizzle 1 tablespoon olive oil over the French bread and top with tomato mixture.
- Sprinkle the basil over the tomatoes and bread.
- Drizzle remaining olive oil over the bruschetta.
- Season with salt and pepper to taste.
- Grate fresh Parmesan cheese over the top.
- Serve and enjoy.
