Classic (and Easy) Tomato Bruschetta

  1. Slice bread at an angle about 1/2 inch thick.
  2. Arrange on serving platter or cutting board in single layer.
  3. Quarter cherry tomatoes and add to a small mixing bowl.
  4. Finely chop garlic and add to tomatoes.
  5. Stack basil leaves and roll to form a green bean-looking log.
  6. Slice into thin strips.
  7. Drizzle 1 tablespoon olive oil over the French bread and top with tomato mixture.
  8. Sprinkle the basil over the tomatoes and bread.
  9. Drizzle remaining olive oil over the bruschetta.
  10. Season with salt and pepper to taste.
  11. Grate fresh Parmesan cheese over the top.
  12. Serve and enjoy.
