Pineapple Cheesecake

  1. Combine cream cheese, egg, sour cream (or yogurt), sugar, lemon juice and peel.
  2. Beat until smooth and thoroughly mixed.
  3. Fold in 1 cup pineapple.
  4. Pour into prepared crust.
  5. Bake in 350F oven for 30 minutes.
  6. Cool.
  7. Refrigerated for at least 2 hours before cutting.
  8. Garnish with remaining pineapple, sliced fruit and mint leaves.
