The Best Ever Vegetarian Spicy Burger!
- 1 whole Onion, Diced
- 1 teaspoon Fresh Ginger, Grated
- 1 whole Red Pepper, Diced
- 2 whole Hungarian Wax Pepper, Diced
- 2 whole Jalapenos Diced
- 2 whole Star Anise Pods
- 1 cup Cooked Wild Rice
- 2 cups Cooked Black Beans
- 1 teaspoon Garam Masala Or All Spice Powder
- 1 teaspoon Roasted Cumin Powder
- 1 teaspoon Dry Mango Powder (optional)
- 1 teaspoon Red Chili Or Cayenne Pepper
- Salt And Pepper, to taste
- 1/2 cups Cilantro, Chopped
- 1 whole Lime, Juiced
- 1 cup Panko Crumbs
- 8 whole Brioche Buns, Buttered
- Pineapple Chutney To Taste
- Saute onion, ginger, all the peppers, and star anise till softened, approximately 10 minutes.
- Remove the star anise before proceeding.
- Cook wild rice according to package instructions.
- Once cool, add to the onion and peppers mixture.
- Mash 1 cup of black beans to a smooth puree and add to the onion and pepper mixture.
- Add rest of the cooked beans, too.
- Add the seasonings (garam masala, cumin, dry mango powder if using, red chili pepper, salt and pepper).
- Add cilantro, lime juice, and make burger-sized patties.
- Roll the patties, covering all sides with panko crumbs.
- Grill or fry the patties until golden brown and seared.
- To serve, toast the buns with butter, set the patties on top, and top with a generous dollop of pineapple chutney.
- Serve warm.
