Black Bean Casserole Recipe
- 1 stk butter
- 2 lrg Minced onions
- 1 lrg Minced bell pepper
- 2 x Cloves garlic, chopped
- 1 can Rotel tomatoes, diced
- 2 tsp Cumin
- 2 can 16 ounce. black beans, not liquid removed
- 12 x 6 inch corn tortillas, cut into quarters
- 2 c. Monterey Jack cheese (8 ounce.)
- 2 x Tomatoes, diced
- 2 c. Shredded lettuce
- 1 bn Green onions, minced
- 1 sm Can black olives, minced Lowfat sour cream
- Saute/fry onions, bell pepper, and garlic in butter.
- Add in tomatoes, cumin, and beans.
- Simmer for 10 min.
- In a 9x13 oiled casserole dish layer first beans, then tortillas, cheese.
- Repeat.
- Bake at 350 degrees F. for 20-35 min.
- Remove from oven and let set 5 - 10 min to set.
- Cut and serve.
- Garnish with tomatoes, lettuce, green onions, black olives, and lowfat sour cream as desired.
