Black Bean Casserole Recipe

  1. Saute/fry onions, bell pepper, and garlic in butter.
  2. Add in tomatoes, cumin, and beans.
  3. Simmer for 10 min.
  4. In a 9x13 oiled casserole dish layer first beans, then tortillas, cheese.
  5. Repeat.
  6. Bake at 350 degrees F. for 20-35 min.
  7. Remove from oven and let set 5 - 10 min to set.
  8. Cut and serve.
  9. Garnish with tomatoes, lettuce, green onions, black olives, and lowfat sour cream as desired.
