Bananaluscious Muffins
- 3 medium bananas, very ripe & mashed
- 1 cup nonfat yogurt
- 12 cup brown sugar, lightly packed
- 14 cup vegetable oil
- 1 23 cups flour
- 2 teaspoons baking soda
- 2 tablespoons ground flax seed meal
- Preheat oven to 400 degrees F. Prepare a cupcake pan with paper cups or non-stick cooking spray.
- Combine the mashed bananas, yogurt (or sour cream) brown sugar and vegetable oil.
- In another bowl, combine the flour and baking soda.

- Add the wet to the dry ingredients and mix until combined.
- Bake 15-17 minutes.
- If mini muffins, check at 15 minutes.
