Blue Cheese Muffins Recipe
- 1 11/20 ounce crumbled blue cheese (blue vein)
- 1 c. finely sliced spring onions
- 2 x Large eggs
- 1/2 c. lowfat milk
- 2 tsp horseradish sauce Or possibly 1/2 tsp chilli sauce
- 2 Tbsp. oil
- 1/2 tsp salt good dash black pepper
- 1/2 c. self-raising flour
- 1 c. rye flour
- 1 tsp baking pwdr
- Preheat oven to 400F, grease pans.
- Thoroughly combine the wet mix ingredients.
- Add in the dry mix & stir till the ingredients are just combined.
- Transfer the mix to the prepared pans & bake for 20-25 mins.
- Makes 10-12.Serve with soups such as pumpkin, potato, zucchini or possibly spinach.
- Variations: Wheat Free - Omit the self-raising flour & add in 1.1/2 tsp of baking pwdr & 1/2 c. more, rye flour.
- BC, Rye & Walnut: Add in 1/2 c. minced walnuts to the wet mix.
