Blue Cheese Muffins Recipe

  1. Preheat oven to 400F, grease pans.
  2. Thoroughly combine the wet mix ingredients.
  3. Add in the dry mix & stir till the ingredients are just combined.
  4. Transfer the mix to the prepared pans & bake for 20-25 mins.
  5. Makes 10-12.Serve with soups such as pumpkin, potato, zucchini or possibly spinach.
  6. Variations: Wheat Free - Omit the self-raising flour & add in 1.1/2 tsp of baking pwdr & 1/2 c. more, rye flour.
  7. BC, Rye & Walnut: Add in 1/2 c. minced walnuts to the wet mix.
