Homemade Mincemeat
- 1 hog head, cooked and boned or an 8 lb. pork roast
- 4 lb. beef suet
- 3 qt. sour cherries
- 3 qt. apples
- 2 boxes golden raisins
- 1 box dark raisins
- 12 oz. citron
- 1/2 tsp. ginger
- 2 tsp. cloves
- 1 qt. blue grape juice
- juice of 4 lemons
- juice and pulp of 4 oranges
- 2 orange rinds, chopped
- 10 c. brown sugar
- 4 Tbsp. vinegar
- 2 Tbsp. salt
- 2 Tbsp. allspice
- 4 tsp. nutmeg
- 2 Tbsp. cinnamon
- Mix
- all ingredients together in a large pot and simmer 1 hour.
- Pack
- hot into jars and process pints and quarts for 20 minutes at 10 pounds pressure.
