Goan Shrimp Paella
- 1 cup basmati rice, uncooked, rinsed
- 1 lb. (450 g) uncooked large shrimp, peeled with tails left on, deveined King Sooper's 1 lb For $4.99 thru 02/09
- 1 cup 25%-less-sodium chicken broth
- 1/2 cup lite coconut milk
- 1/4 cup Kraft Oil and Vinegar Dressing
- 1/4 cup canned crushed tomatoes
- 1/4 cup chopped fresh coriander (cilantro)
- 1 tsp. garam masala
- 1 tsp. ground coriander
- 1/2 tsp. red chili powder or cayenne pepper
- 1/2 tsp. ground turmeric
- 1 Tbsp. oil
- 1 onion, finely chopped King Sooper's 1 lb For $0.99 thru 02/09
- 20 fresh curry leaves
- 1/2 tsp. black mustard seed
- Place rice in medium bowl.
- Add enough cold water to cover rice.
- Let stand 10 min.
- Meanwhile, combine next 10 ingredients.
- Heat oil in large saucepan on medium-high heat.
- Add next 3 ingredients; cook and stir 5 min.
- or until onions are crisp-tender.
- Drain rice.
- Add to onion mixture in skillet with the shrimp mixture; stir.
- Cover; bring to boil.
- Simmer on medium-low heat 20 to 25 min.
- or until rice is tender and liquid is absorbed.
- Remove from heat; let stand 5 min.
