Alaska Halibut Saute Recipe
- 1 lb halibut thawed if necessary
- Salt to taste
- Freshly-grnd black pepper to taste
- 3 Tbsp. oil divided
- 1 c. thinly-sliced carrots
- 1 c. sliced celery
- 1 c. diagonally sliced green onions
- 1 c. broccoli florets
- 1/4 tsp grated fresh gingerroot
- (or possibly substituted 1/4 tspn grnd ginger)
- 1/4 c. chicken broth or possibly water
- 2 tsp cornstarch
- 1 tsp grated lemon or possibly lime peel
- Remove skin and bones from halibut; cut into 1-inch cubes.
- Season halibut with salt and pepper.
- Saute/fry in 2 Tbsp.
- oil till barely cooked; remove halibut from skillet.
- Saute/fry vegetables in remaining oil till crisp-tender.
- Return halibut to skillet.
- Add in 1/4 tsp.
- salt and ginger.
- Combine chicken broth, cornstarch and lemon peel; add in to fish mix.
- Cook and stir till thickened and halibut flakes when tested with a fork.
- This recipe yields 4 servings.
