Glazed Chicken(From Mjb Rice)
- 1 c. rice (not Minute type)
- 4 half chicken breasts, boned and skinned
- 1 Tbsp. flour
- 1/4 tsp. garlic powder
- 1/2 tsp. paprika
- 1 Tbsp. oil
- 1 can chicken broth
- 1 Tbsp. cornstarch
- 2 Tbsp. soy sauce
- 1 Tbsp. catsup
- 1 Tbsp. wine vinegar
- 1 tsp. sugar
- 1/4 c. water
- 1 pkg. partially thawed Chinese pea pods
- Cook rice according to package directions. Cut chicken into 1/2-inch strips.
- Mix flour, paprika and garlic. Add chicken and toss to coat. Stir-fry chicken in hot oil until lightly browned. Add broth; cover and simmer 5 minutes.
- Combine cornstarch and next 5 ingredients. Blend mixture into ingredients in pan, stirring until sauce boils. Add pea pods. Cover and cook until tender-crisp.
- Serve over rice.
