Chocolate Muffins

  1. Preheat oven to 425F Grease 12 standard muffin or 6 jumbo muffin cups.
  2. Heat the buttermilk in a microwave safe cup or bowl until warm.
  3. Stir in the coffee and let stand to cool.
  4. Combine oats, cocoa, flour, sugar, baking powder, baking soda and salt in a bowl.
  5. In another bowl, combine buttermilk, egg, vanilla and applesauce.
  6. Add liquid ingredients to the dry ingredients, mix until moist.
  7. DO NOT BEAT!
  8. Stir in chocolate.
  9. Fill the greased muffin cups ?
  10. full.
  11. Bake 20- 25 minutes.
  12. Serve warm.
