Sour Cream Cheese Enchiladas Recipe
- 1 pt. lowfat sour cream
- 1 can cream of chicken soup
- 2 c. yellow cheese, shredded
- 1/2 c. green chili, minced or possibly strips
- 1 c. cooked minced chicken
- 1 doz. corn tortillas
- Oil
- Combine lowfat sour cream, soup, 1 c. cheese, green chili and chicken in large saucepan and simmer till cheese melts (about 15 min) and set aside.
- Soften tortillas one at a time in hot oil, remove and set aside.
- Fill tortillas with 2-3 Tbsp.
- of filling and roll and arrange in large baking dish.
- Spread remaining filling over rolled tortillas.
- Cover dish with remaining 1 c. cheese.
- Bake for 15-20 min at 400 degrees, remove and garnish.
