Sour Cream Cheese Enchiladas Recipe

  1. Combine lowfat sour cream, soup, 1 c. cheese, green chili and chicken in large saucepan and simmer till cheese melts (about 15 min) and set aside.
  2. Soften tortillas one at a time in hot oil, remove and set aside.
  3. Fill tortillas with 2-3 Tbsp.
  4. of filling and roll and arrange in large baking dish.
  5. Spread remaining filling over rolled tortillas.
  6. Cover dish with remaining 1 c. cheese.
  7. Bake for 15-20 min at 400 degrees, remove and garnish.
