Asian Pork Tenderloin with Baby Bok Choy

  1. Heat oven to 425 degrees F.
  2. Mix first 5 ingredients until blended.
  3. Cook meat in large skillet sprayed with cooking spray on medium-high heat 5 min.
  4. or until evenly browned, turning occasionally.
  5. Transfer to rimmed baking sheet sprayed with cooking spray.
  6. Bake 15 min.
  7. or until done (145 degrees F), brushing with 1 Tbsp.
  8. dressing mixture for the last 5 min.
  9. Meanwhile, add carrots and remaining dressing mixture to skillet; cover.
  10. Cook on medium heat 5 min.
  11. Add bok choy; cook, covered, 12 to 13 min.
  12. or until vegetables are tender.
  13. Remove meat from oven; tent with foil.
  14. Let stand 3 min.
  15. Transfer meat to cutting board; slice meat.
  16. Place vegetables on platter; top with meat, cooking juices from skillet and nuts.
