White Chocolate and Lime Cheesecake

  1. Melt chocolate in a double boiler.
  2. Halve lady fingers and line an 8 1/2 inch springform pan with them, rounded sides out.
  3. Beat cream cheese on lowest speed until smooth.
  4. Blend in chocolate and sugar, mixing well.
  5. Sprinkle gelatin over lime juice in a small saucepan.
  6. Allow 5 minutes for it to soften, then stir over low heat until gelatin is dissolved.
  7. Blend gelatin and lime peel into cheese mixture.
  8. Fold cheese mixture into whipped cream.
  9. Pour into pan.
  10. Chill at least 3 hours.
  11. Garnish with strawberries and lime slices.
