Fettuccine Hungry Girlfredo

  1. Use a strainer to rinse and drain the shirataki noodles well.
  2. Pat dry.
  3. Place in a microwave-safe bowl and microwave 1 minute.
  4. Dry as thoroughly as possible, using paper towels.
  5. Cut noodles up a bit, using kitchen shears or a knife.
  6. Add cheese wedge, grated topping, and sour cream, breaking the cheese wedge into pieces as you add it.
  7. Microwave for 1 minute.
  8. Stir well and then season with salt and pepper.
  9. Garnish with parsley and additional grated topping and serve with broccoli, if using.
  10. Enjoy!
  11. Cook's Note: Alternatively, recipe can be prepared in a skillet on the stove, over medium-high heat, until hot and well mixed.
