Rice and Peas

  1. In a saucepan, heat the oil over medium-high heat; fry the onion, stirring occasionally, until softened, about 3 minutes.
  2. Add the red pepper and rice; stir for 1 minute.
  3. Add the stock, cinnamon, salt and pepper; bring to a boil.
  4. Reduce the heat, cover and simmer until the rice is tender and the liquid is absorbed, about 20 minutes.
  5. With a fork, stir in the peas and heat through.
