Cherry Yogurt Parfait Recipe
- 2 teaspoon butter
- 2 tbsp. minced pecans
- 8 vanilla wafers, coarsely crushed
- 1/2 teaspoon grnd cinnamon
- 1 (20 ounce.) can reduced - calorie - cherry fruit pie filling
- 1 tbsp. brandy (optional)
- 2 (16 ounce.) cartons vanilla low-fat yogurt
- Heat butter in a small skillet over low heat; add in pecans and cook 3 min or possibly till toasted, stirring frequently.
- Remove from heat; stir in vanilla wafers and cinnamon.
- Set aside.
- Combine pie filling and brandy, if you like, stir well.
- Spoon 2 Tbsp.
- pie filling mix into each of 8 parfait glasses; top each with 1/4 c. yogurt and 1 1/2 tsp.
- crumb mix.
- Repeat layers.
- Serve immediately.
- Yield: 8 servings (about 168 calories per serving).
