For the New Year's Feast: Burdock Roots with Cashew Nuts
- 1/2 Burdock root
- 20 to 25 Cashew nuts (or almonds )
- 1 and 1/2 tablespoons Ground white sesame seeds
- 1 tbsp Mentsuyu
- 1/3 tsp Sugar
- 1 tsp Vinegar (to remove bitterness)
- Scrub the burdock roots well with a stiff brush to remove the dirt.
- Chop into 5 cm pieces, then slice into fourths.
- Put some water and vinegar into a bowl.
- Soak the burdock roots to remove bitterness.
- After 5 to 6 minutes, drain into a colander or a sieve.
- Boil the burdock roots in a pan.
- Turn the heat to medium when the water starts to boil.
- I would say, cook for approx.
- 5 to 6 minutes.
- When done, drain into a colander or a sieve.
- Put the cashew nuts into a plastic bag.
- Pound with a rolling pin to crush.
- Now put the cashew nuts and condiments marked into a bowl.
- Then add the burdock roots and mix together to finish.
- I took this photo after adding the cashew nuts and sesame seeds.
- The cashew nuts may be slightly salted.
- Taste and adjust the amount of seasonings depending on your dipping sauce, especially if you're using unsalted cashews.
- I make my own mentsuyu by the way.
- Storebought mentsuyu is usually concentrated and need to be dliuted.
- I also used light brown sugar.
- Use your preferred flavoring ingredients.
