Fresh Pineapple Relish

  1. Place all of the ingredients in a heavy saucepan and bring to a boil.
  2. Reduce the heat to medium and simmer, stirring occasionally, for 30 minutes.
  3. Let the relish cool to room temperature, and then refrigerate it, covered, until ready to use.
  4. Serve at room temperature with pork, fish, or poultry.
