Roasted Vegetable Guacamole

  1. Roast corn and sweet peppers.
  2. (See tips.)
  3. Cool.
  4. Cut kernels from corn cob.
  5. Peel away blackened skins from peppers; discard skins.
  6. Cut sweet peppers and jalapeno peppers lengthwise in half; remove and discard seeds.
  7. Finely chop peppers.
  8. Mash avocados with dressing in medium bowl.
  9. Add corn, peppers and 1 Tbsp.
  10. cilantro; mix well.
  11. Top with sour cream and remaining cilantro.
