Balsamic And Tomato Bruschetta Recipe
- 1 pt cherry tomatoes minced
- 1/4 c. fresh basil minced
- 2 Tbsp. extra-virgin extra virgin olive oil
- 1 Tbsp. balsamic vinegar
- 1 x garlic clove chopped
- 1/2 tsp salt Freshly-grnd black pepper to taste
- 1/2 tsp sugar
- 1 x baguette - (abt 20" long)
- 1 x garlic clove
- 2 Tbsp. grated Parmesan cheese
- Combine the minced tomatoes, basil, extra virgin olive oil, vinegar, chopped garlic, salt, pepper and sugar in a bowl.
- Toss.
- Cut the baguette into 4 pcs.
- Slice in half lengthwise and place on baking sheet.
- Toast in a 400 degree oven for about 10 min; turn once.
- Remove when crusty on both sides.
- Rub bread with the garlic clove.
- Spoon the tomato mix over the bread and sprinkle with Parmesan cheese.
- Serve immediately.
- This recipe yields 8 servings.
