Chicken Breasts in Tomatoes
- 1 tablespoon butter
- 1 tablespoon vegetable oil
- 4 boneless skinless chicken breast halves
- 1 small onion, peeled and finely chopped
- 1 teaspoon paprika
- 1 (28 ounce) can tomatoes, drained and chopped
- 14 teaspoon basil
- 14 teaspoon oregano
- 14 cup heavy cream
- salt
- fresh ground pepper
- chopped fresh parsley (, to garnish)
- Heat butter and oil in frying pan; when hot, add chicken and cook 3 to 4 minutes over medium heat.
- Season well and turn chicken over; partially cover and continue cooking 4 more minutes.
- Add onion and paprika; mix well.
- Partially cover and cook another 3 to 4 minutes over low heat.
- Stir in tomatoes and spices; cover and cook 8 to 9 minutes over medium-low heat.
- When chicken is done, pour in cream and mix well.
- Sprinkle with parsley before serving.
