Stuffed Pepper Soup
- 3 whole Large Bell Peppers, Chopped
- 1/2 cups Onion, Diced
- 1 clove Garlic, Minced
- 2 whole Beefsteak Tomatoes, Chopped
- 1 can (15 Oz.) Tomato Sauce
- 1 can (15 Oz.) Black Beans, Drained
- 1 Tablespoon Brown Sugar
- 1 teaspoon Oregano
- 1 teaspoon Basil
- 1 teaspoon Rosemary
- 2 cups Water
- 1 cup Cooked Rice
- Combine all ingredients except the rice in your crockpot.
- Cover and cook on low for 8 hours.
- Thirty minutes before serving, cook the rice according to package directions.
- Add the cooked rice to the crockpot and combine the mixture.
- Serve with your favorite biscuits, cornbread, or tortilla chips!
