Spicy Pumpkin Soup

  1. Heat the oil in a large pan and saute the onion over a low heat for around 10 mins until soft.
  2. Add the chopped chillies and crushed coriander seeds to the pan and cook for 1-2 minutes.
  3. Add pumpkin and potatoes and cook for a further 5 minutes Add the stock, season, the cover and bring to the boil.
  4. Simmer gently for 15 mins or until the vegetables are soft.
  5. Whiz the soup with a blender until smooth.
  6. Reheat to serve.
